Breakfast Burrito: Black Beans, Roasted Tomatoes, Brown & Wild Rice, Eggs

  

½ cup black beans, drained and rinsed

½ cup diced roasted tomatoes with garlic

2 eggs

½ microwave cup Brown and Wild rice

1 soft taco shell, whole wheat

Hot sauce

 

Microwaved rice cup.  Heated small skillet on stovetop, then added black beans & tomatoes.  Pushed beans and tomatoes to the sides of the pan to make a little pocket, added 2 eggs in the middle of the pocket.  Cooked until eggs were over medium.  Heated up the tortilla in the microwave for about 20 seconds.  Wrapped the mixture of beans, rice, and egg in the tortilla and added a little hot sauce.
